Eggless Chocolate Orange Cake



Ingredients:
1 cup plain flour
1/2 cup fine sugar
3/4 cup softened butter
1/2 cup cocoa powder
2 tbs marmalade (adjust to your preference)
3 tbs Tangs diluted in 1/2 cup warm water
1 tsp baking powder
A pinch of baking soda

Method:
1. Preheat the oven at 180degC for at least 20min. Line a baking tray of your preference and set aside.
2. Sift the flour, cocoa powder, baking powder & baking soda and set aside.
3. Cream the butter and sugar till it is nicely incorporated.
4. Add the marmalade to the Tangs mixture. Add this mixture to the creamed butter.
5. Add the dry ingredients in batches and mix well.
6. Pour it into the prepared dish and bake at 180degC for at least 30min or till a toothpick comes out clean.

Basic Eggless Chocolate Cake

Basic Eggless Chocolate Cake

Makes 12 cupcakes / 1 med sized cake

Ingredients:
A.
1 packed cup whole wheat flour
3 tbsp cocoa powder (4 tbsp if you prefer dark chocolate flavour)
1/2 tsp baking powder
1/2 tsp baking soda

B.
1/4 cup butter (4 tbsp/50g)
200ml/g condensed milk
2 tsp vanilla extract
Boiling water as required

Direction:

1. Preheat over at 180deg C for at least 20 min.
2. Mix (B) condensed milk, butter and vanilla extract and set aside.
3. Sift (A) flour, cocoa powder, baking powder and soda.
4. Mix the dry ingredients to wet mixture alternating with few tbsp of water each time to get a smooth pouring consistency.
5. Once all the ingredients have been incorporated, pour into the prepared container and place into the oven. Reduce the temperature of the oven to 175deg C and bake for 20-25min for cupcakes or 30-35min for a cake. Bake till a toothpick or skewer comes out clean.
6. If you are baking in 1 batch, turn off the heat and leave the container in the over for an additional 10min. Remove and continue to cool on the cooling rack.
7. Serve with ice cream or enjoy it on its own.

Variation: For a stronger chocolate flavour without adding more cocoa powder, dissolve 2tsp of good quality coffee in hot water and mix it in (B) at Step 4.

Vegetarian Mutton Mysore

Vegetarian Mutton Mysore

Ingredients:

1 star anise
1 inch stick cinnamon
1 mid size bay leaf
1 tsp fennel seeds
1 tsp cumin seeds
1 tsp fenugreek seeds
2 tbs red chilli powder
1 tsp tumeric
1 tsp fennel powder
1 tsp cumin powder
Salt to taste
2 med or 1 large red onion diced
1 red chilli sliced diagonally
1 tomato diced
2 tbs tomato sauce
2 tbs ginger garlic paste
1 stalk curry leaves
4 tbs ghee (clarified butter)
1 open fist cashew nuts
500g vegetarian (mushroom based) mock mutton
 
Method:

1. Heat ghee and add star anise, cinnamon and bay leaf and sauté till fragrant on medium heat. 
2. Add fennel, cumin, fenugreek seeds and sauté till a seeds stop bubbling on the side. 
3. Add ginger garlic paste and onions and fry till golden brown. 
4. Add curry leaves, tomato and tomato sauce. Fry until juices separate. 
5. Add all spice powders and fry till oil separates.
6. Add defrosted mock meat and cook on low flame. Add salt to taste.
7. Add a few drops of hot water to get the mixture manageable; stir occasionally. 
8. Spice mix will become very fragrant towards the end. Before removing from heat, make a well in the pan, add a little ghee and roast the cashews. Mix evenly and remove from heat.

* Garnish with coriander leaves and serve hot with rice or bread.
